Description

Soft lemon ricotta pancakes with sweet blueberry sauce are light and flavorful. These are perfect for special mornings or a citrusy treat.

Ingredients
  • 1 cup Flour
  • 1 tsp Baking Powder
  • 1 tsp Sugar
  • 1 cup Ricotta Cheese
  • 2 Large eggs
  • 1/2 cup Milk
  • 1 cup Fresh Blueberries
  • 1 tsp Honey
  • 1 Zest of Lemon
Instructions
  1. Combine flour, with baking powder and sugar, in a bowl.

  2. Mix the ricotta cheese with eggs and milk in a bowl while adding a touch of lemon zest, for flavor.

  3. Cook pancakes on an oiled skillet or pan until it becomes golden

  4. Heat blueberries and honey to create a drizzle. Pour over pancakes
